Many students have a lot of catching up to do

At the Cultural Academy for Arts & Sciences (CAAS), students may cook with a professional chef, learn about the law by putting on mock trials, or read their own poetry at Brooklyn Academy of Music, according to the school website.

Culinary arts students run a school café, learning how to plan a menu, cook and market the café. The Brooklyn Academy of Music offers classes during the school day and after school.

Most students enter with poor academic skills, and, while about two-thirds graduate within four years, others need more time.  

CAAS shares the Tilden Educational Campus with other small schools. Students must pass through metal detectors to enter the building.  (Clara Hemphill, August 2018)

Program Description:

Students are taught by chefs who have several years of experience in the restaurant industry. They begin by studying Kitchen Safety & Sanitation and progress through Recipes, Weights and Measures; Flavor and Nutrition; Knife Skills, Vegetable and Meat Fabrication; Stocks, Broths, Soups and Sauces; Cooking Methods, Techniques and Terms; International Cuisines. Students also learn through, internships, catering events, running a lunch cafe, and field trips to produce markets and restaurants.
